Maple-Bacon Muffins

1 2/3 all purpose flour (whole wheat also works fine)
1/3 cup packed brown sugar
2 t baking soda
1/4 t salt
1/2 cup milk
1/2 cup real maple syrup
1/3 cup melted butter
1 egg
6 slices bacon, crisply cooked, crumbled

Heat oven to 400 degrees.  Spray 12 muffin cups with cooking spray.

In large bowl, mix flour, brown sugar, baking soda and salt.  Combine in milk, syrup, butter and egg.  Stir until dry ingredients are moistened.  Stir in bacon.  Fill muffin cups three-fourths full.

Bake 16-18 minutes or until toothpick inserted in center comes out clean.  Immediately remove from pan.  Serve warm.
