Blueberry Banana Bread



  • 2 cups all-purpose flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 t vanilla extract
  • 2 medium-sized ripe bananas, mashed
  • 1 cup (or more) fresh blueberries

In a bowl, combine flour, baking soda and salt. In a large mixing bowl, cream the the shortening and sugar. Add eggs and vanilla; mix well. Beat in the bananas. Gradually add the dry ingredients, beating just until combined. Fold in blueberries.

Pour into three small loaf pans (5*3*2 in). Bake at 350 for 30-35 minutes or until toothpick inserted into the center comes out clean. Cool before slicing. If you use one regular sized loaf pan, be prepared for about an hour and a half of baking.
